View Full Version : Alright, so maybe they were not the best in town

Acting on a tip, I found some skirt steak in the area and and did me up some fajitas...Sqeezed a lime or two and a little salt and pepper as suggested...Cut up some chicken brests (mainly to expose more surface area for the marinade and mesquite smoke), tried an achiote paste marinade (sweetened slighly with brown sugar and molassas). Grilled it all over a hot fire, (lump coal and dry mesquite wood), and served it up with grilled tortillas, avacdo slices, peppers and onions, a little sour cream, some home made salsa verde,(Raichlen's recipe), and some regular old store bought salsa (probably made in New York).
Also made some cheese enchiladas, which the filling (basically just a mexican four cheese blend), was prepared on the grill, and then rolled up into some tortillas, slathered up with salsa's and cheese, and heated through back on the grill...Soaked up some smoke! Nice flavor.

Maybe not the best in town...But It was pretty darn good.....

Nice job. I find it amusing if you go to most markets and ask for flank steak you just get a dumb stare but if you ask for fajita meat they know what you are talking about. I had a guy in the meat dept ask me what was the difference and i told him about $2.00 per pound since the fajita meat is all prepackaged and seasoned.

Not for sure if he went there or not, but I told him he could get skirt steak at the Honey Bee market on Bagley in Detroit.

I was able to find the skirt steak at Honey Bee Market, down in Mexicantown....Bagley and 17th.
However they were pretty thin cuts of meat (much thinner than what I could find in Chigaco). The flavor of the meat was simple and good with just the limes, salt and pepper. It did however turn out a little tough, without too much influence from the lime, so I could've got away with a little longer marinade time to help the acidity tenderize the steaks. But all in all the skirts turned out great...
The chicken.....Well?...That could've worked out a little better. Cutting them into thicker slices, or leaving them whole and inderect grilling them would have left them a little more moist. And the achiote marinade that tasted so strong in the bowl, didnt' really leave that much flavor once grilled....
Oh well...Try and try again!....Oh and by the way....they werent really all that bad.....Faijitas....Umm!!!

I have been planing that meal for a while and after seeing yours it will be this weekend.I also want to try taco's with meat instead of hamburger.

Rude? I never got that impression at all...Not a problem brother! Your Fajitas look great! I'd go much heavier on the S&P myself as much of it gets stuck on the grill anyways, but season to taste is the best rule of thumb. Good work!! :eusa_clap

Yes they do! I prefer their fajita seasoning, which they sell in the spice isle, over Bolners, but Bolners is very good too!
