I'm doing six slabs today. Same setup as you, but just 3 slabs per grate laid flat. Been holding steady for 3 hours now. Top shelf grate temp is running 20 degrees hotter than the bottom.

Well...the maiden voyage was a success...the drums performed as expected and produced some excellent Q. I'll need to do a little tweaking on the lids to get them to fit a little tighter...but that's about it...they are ready for the comp circuit. Here are a few pics from the day's adventure...

Me and Swamp doin' the flip and spritz on the bb's...

Looks great. Did you have any troble getting up to temp with the weber lids? My uds doesn't like to run over 200 with the stock weber lid. It fits very tight. I have modified it with an extra vent, but haven't tried it as off yet.

None...shot right up to 250 in about 10 minutes...:-P

Thanks Jeanie...we did not eat ANY of the ribs or butts...they were for co-workers of mine and my wife. I wanted to break in the new drums with a couple of long low-n-slows...they were more than willing to pay for the meats! :-P

JD,
Man...You weren't joking.....That is a boat load of wood !!

When you take the lid off to spritz the meat does the temp spike less with the clay diffuser than without ?
How does the bottom rack cook compared to the top rack ?
Ron

Thanks Ron...I couldn't say one way or the other because I always use the diffuser...as far as the two racks...they were pretty much even.

One of the wood stacks toppled over on the 4th...so I have to re-stack it this weekend... I think Swamp did it...

Those are some awesome looking, matching bad boys. I am assuming those were new barrels when purchased or did you high temp paint and gloss them? Are those stickers I see on the side??

We're taking them to Birch Bay (I think)...then possibly Chehalis...we're still finalizing our game plan.

Those were used barrels that contained canola oil. I get them free from Campbel's Soup...:-P They were not painted...yet.
