These were inspired by Thirdeye. I first saw them on the bean throwdown and Thirdeye was gracious enough to share his recipe and direction.

Yup thirdeye sure does got it going on. Buuuut why is he called thirdeye? Does he have eyes in the back of his head? All we know of him is he's a great cook. So what's up with the thirdeye?

Man, those would be tough to serve to very many folk! Not a normal appetizer for many people. Just a thought.

Kevin, how did you get Shiner Bock in Minnesota? I didn't know it was up this far...:confused:

Poblano's are my favorite pepper for stuffing. I usualluy just mix grated cheddar with bulk sausage. Sometimes I half into boats and sometimes I just slice off the stem end and then stuff. The latter provides more pepper while the former provides more stuffing. Here's a pic from one of Greg's bashes with Poblano's I grew.

I was able to get Shiner locally for awhile, then the distributor pulled it. It is available in Mankato, 45 mile drive. Worth it.
