I was sharing homebrews with our neighbors on Sunday watching that convoy of old military vehicles make it's way across America along the Lincoln Highway. The son of one of my neighbors is a food distributor and a CIA trained chef. He asked me about BBQ and I asked him about his business. We got to talking about knives and he mentioned Dexter-Russell knives. He sells them. Do any of you have any first hand experience with these? The selling point is that they are quality knives priced for hard use - so not meant for hoity-toity chef types 8)

I have a D/R 6" narrow boning knife (http://www.dexter1818.com/Item_Details_1.asp?id=1080&line=SG) that is outstanding. The thing is scary sharp, comfortable to use (the SofGrip is nice), and holds an edge very well. It makes quick work of carving out those kernels of fat from a brisket. I highly recommend them.

They are basically the same thing as Forschners. Very good knives for the money.

Another yes vote for Dexter Russell. I've used them since I was a kid. Be sure to get a handle material that's grippy and easy to clean (and NSF certified). They also make rosewood handles, which can get water damaged if you leave them soaking, and then you have sanitation issues once that happens.

Used them all through cooking school and still have a drawer full of them. Great knives for the money, and used in commercial kitchens everywhere.

Another yes vote for DR. I've got a 12 inch DR chef's knife that's at least 30 years old and works very well.

Ive been using them at cookoffs for several years..

Have two six inch boning knives and mainly use them for triming...

Alot of bang for the buck...

If I lose one, no sweat, only cost around $15 bucks to start with... from restruant supply house..

I've got a set of D/R knives with the Sysco brand on them. Great knives!
