Tonight I smoked some beef back ribs over cherry and served them with some fire-roasted corn.

Couple things here:
First off - the love of cooking with cherry wood. Look at the color it brings to those ribs - outstanding results that are indisputable.
Second: Your photos here illustrates something that most folk do not understand when cooking beef ribs - cook the hell out of them. Beef ribs tolerate a !LOT! of cooking and they benefit from it greatly.
I'll stop there before I give away all my secrets.

I seasoned them with a heavy coat of the bold version of my competition rub. I have posted the base recipe (http://www.patiodaddiobbq.com/2009/02/all-purpose-bbq-seasoning.html)(well, most of it :wink:) on my blog. The bold version just has less sugar and double the chili powder, black pepper and cayenne.

i think very much so you have to smoke the hell out of beef ribs to get the full flavor and to be tender i say at least 6 - 8 hours or 3-2-1? method
