i want to smoke some sausage. I love smoked sausage & want to make some for the house. What raw sausage should I try?
I really like Johnsonville brats, but thats just me.......and there isnt much else around here available.

i get the bob evans three pack at sam's for under $6.00. the one pounders are 4 bucks a piece at krogers now :shock:

There is no substitute for fresh "processed" meat, with or without the casing. Many mixers have meat grinding attachments that will "plug" into the face and will work for small batches. I have even "pulsed" proteins in the food processor to get them smaller. Once the meat is processed just add your favorite spices and or fruits and smoke away.

I like making my own sausages, but Johnsonville isnt a bad brand. I know you have a local butcher around, your in Chicago for God's sake. A fresh market will have in store made sausage as well. Cant go wrong with that direction.
