View Full Version : Huge brisket cook has started.

I got it on a little late at around 10:00. Hopefully it should still cook in 10 or 11 hours on my Jumbo BDS. Here a few pics after the first turn.

Well I am a little suprised. After just over 7 hours the flat is already at 193. I would have thought it would have taken a lot longer.

I pulled it off after 8 1/2 hours at around 197. Came out great. It was tender and juicy and had great flavor. Here are a couple pics after it was seperated and sliced.

Very nice! I would have thunk that a packer at that size would have taken a lot longer than 8 1/2 hours at 250 degrees. Looks tender and juicy though!

Not yet. I am going to let it sit for a couple months before I use it.
