View Full Version : Are Costco Ribs enhanced?

Just wondering, I bought a pack, and I swear it was enhanced, I get nice smoke rings normally, but heck, the pink color was throughout the rib...
I've bought ribs from Costco before, this is the first time this has happened.
How do you tell if its enchanced before you buy? It didn't say anything on the packaging.

They are not enhanced at my Costco so I bet they aren't there either. If it doesn't say they are, they aren't in my experience. You could just ask one of the butchers next time to make sure.

Sometimes you hit the PowerBall on rub, smoke, time, etc. and ribs get pink all the way through. Cryovac packer ribs are not normally "enhanced". YMMV!

Unless I am misinformed, if they are "enhanced" they have to be labeled so.
It may not say enhanced, though. Could say something like injected with a ?? percent brine solution, or :contains up to ?? percent water, etc.

Enhanced is actually a weasel-work to make you feel good about paying meat price for salt water.

The ones from our local Costco are not enhanced either. Were they in the normal clear cryovac packing or something else?

If it didn't say on the label that they were enhanced, then they weren't. They have to label the additional ingredients/additives. It will say something like moisture enhance with 10%... If the label only has the cut and price, it should be non-enhance.

As to the pink all the way though, that can happen depending on the wood you use. I use Mesquite and I can make them pretty pink.

Oh, one other clue to look for. It they taste like ham, then they are enhanced.

Cooking a couple of racks on Saturday that I bout yesterday at my local Costco. I looked closely as the didn't say anything about being enhanced.
Also bought a big flat that will be going on earlier.

Read the label.
It will say it on the package if it is.

the salt in your rub & overnight in the fridge can do that too-almost like a cure.

It definitely was not "hammy", one of the better racks I've cooked.
It did not say enhanced...
I did use "Keawe" (a cousin of mesquite) and Guava chunks...

I get most of my ribs from Costco in the cryovac packages, and my babybacks almost always come out pink through and through. I generally use a combination of mesquite and apple for smoke wood, and unless I get carried away with the cayenne in the rub have never had a complaint... At our Costco, most anything in cryovac is not enhanced, just large quantities of the real thing.
