Glad to see Fred is getting some acceptance here. He was chased off a different forum for no real reason. He's got some pretty cool videos of different cooks he has done. And so there might be some advertising or you have to go to his site to see it but who cares. No one is forcing you to buy to watch his BBQ videos or see a recipe etc. The guy means well. I don't know Fred or for that matter have ever bought from him. My point is he diggs BBQ and seems to be an all around good person.

Did the poultry one today on some chicken leg quarters. My wife and I both agreed it was very good. I thought it was going to be to salty but is was just very flavorful. I will definetly order some tomorrow or at maybe give a few more a try before I order. Did some spagetti squash and rice and beans with it. Just got a message from Fred after asking if it was still coming..

" I hope you can be patient... We received over 600 orders for the free samples in 4 days ...somebody publicized that link without me knowing it! I was "blind sided" I never anticipated nor planned for that many.... So we are "behind" in getting them out. (we needed to package over 6000 individual packets).
I have to process my "regular" (paying) orders first (which we do every day)..... then we work on the free samples.

So you will get the stuff but again, there are still maybe 200 or so that I have to mix/package/ label/ and mail.
We should be caught up in a week or so.

Here are some chicken quarters using Fred Bernardo's poultry rub. They came out fantastic! I would highly recomend this. I love making my own rubs and sauces but I will order more of this. My friends devoured it in short order.

I just had a chance to take a look at this entire thread .... nice pics and the things you cooked look great!

The "Signore Bernardo Poultry Blend" is my attempt to duplicate the seasoning that my mother put on her roasted chicken. (which she made EVERY Sunday along with the pasta dish) Even though she just "judged" and sprinkled the stuff on , it always had that same rustic flavor ... so that product is my reproduction .....I actually had her pretend she was putting it on a chicken (she's 92 years old...she thought I was crazy) and I weighed it all out and that is the recipe you are tasting.

Again ... I'm really glad everybody is enjoying the rubs and seasonings.
