Alright, now that the weekend is here, I made my first purchase for the Bandera... an 8lb pork loin. I got the meat, the wood chips and charcoal, now I need some good ideas of how to smoke this everyone! I appreciate any rub recipes, time to let it smoke, best temperature, et cetera. Remember, I am a virgin smoker, ready to lose that fire cherry!

loin is so lean that I don't like to cook it too long, my best loins have been, Rub with favorite rub, wrap with bacon and smoke @ 250 til internal temp is 160, wrap with foil and cooler an hour or so

I slather and rub, put it on the pit, smoke it to 145 - 150 max, 145 still a touch of pink in the middle, but if you rest it tented, it will loose the pink with carry over, 150 it will start to dry.

My wife likes me to take it to 155 - 160 as she likes it a little drier than the rest of the family.

wrap with bacon, still moist at 160, I know it is considered safe nowadays to cook pork medium, but I still have a hard time eating pink pork,

Well, got the smoker going, and got the meat going as well. I put 2 lbs in the freezer for later and I decided to use 2 different rubs.

The first one is a spicier rub: chipotle, pepper, cinnamon, onion, garlic, and paprika. All of that is covered in a layer of brown sugar and then wrapped in bacon.

The second on has a fresh crushed mustard seen. That is then covered in brown sugar and wrapped in bacon!

We then threw a few kabobs on the bbq for lunch.

Let us know how she came out!!! looks good so far! Was that all the kabobs? That wasnt lunch that was enough to tickoff the fat kid in us all:razz:

Those are Whiskey Oak Barrel chips :) It is in the chest in foil....

Nice job iceman! It looks like Jack has helped turn yet another innocent into "one of us". Those loins look freakin' delicious...
And I couldn't help but notice the green jello salad, are you from Utah???
