View Full Version : Chicken Quarters on the Drum

Did some chicken quarters on the UDS this afternoon. I used the Kingsford Competition Briquettes by themselves because I was experimenting.

Used pretty simple seasonings -- a little salt, pepper, garlic powder and onion powder. One of them got brushed with Woody's Cook-In Sauce. It was a gift from a friend so I figured I'd try it out. (Liquid smoke was a prominent ingredient, but I tried it just the same.)

They were done faster than I expected. When I temped them after about an hour and 45 minutes they were at 167° to 172°. I let the drum creep up into the 300s with one cap off and valve about 3/4 open. The 3/4" exhaust holes on the lid seem to make it run hotter but it worked out fine.

I ate the one with the Woody's on it but didn't sample any of the others so I don't know how it would compare. Could definitely taste the liquid smoke!

Were you trying to guage the flavor of the charcoal? What did you think?

Holy flashback Batman......I haven't seen the Woody's since the early 80's. Used to make a 100 mile road trip (bar hopping the whole way) to buy a few jars.

Well, sort of. I was trying to back off a little on the smoke flavor for the wife and kids. :icon_blush: They seemed to really like the chicken. I had the leg with the Woody's on it so I can't really say. I'll have to update after leftovers tomorrow.:biggrin: I do like the smell of the Kingsford Comp though.

A guy I work with who grew up in Texas gave it to me. I'm not sure where he got it. I'll have to try a little more of it next time. He was telling me it is really concentrated so I went pretty lightly with it.

Well had some leftovers today from the pieces that didn't have the Woody's on it and can report chicken in a UDS is delicious cooked over Kingsford Comp with no smokewood. Can't say anything about other meats cause I haven't tried it yet. But if you're cooking for someone who who only likes real light smoky flavor, this is a very nice comprimise.
