View Full Version : UDS Update Seasoning tomorrow

Well my UDS is finally ready to go.

Picked up 2 22'' racks for 7bucks at the local wally world. Yep 7 bucks for both of em.

Also completed my charcoal basket. Added an ashtray and a handle. The ashtray is a bit shallow, but it will do until I can find something else. I attached the tray to the basket with a couple bits of old smoke rack.

I got the basket all loaded up and the inside of the drum coated with oil. The plan is to fire her up tomorrow morning and see how it goes. I guess I just spread out 20 lit coals on top right?

I figure that as long as I was putting all this together I midas well put this together too. Nothing fancy, 2lbs hot sausage, some onions and some cheese.

looks good, I'm gonna have to steal that ashtray idea, the more I bbq the harder it is to reach down in there and clean out the drum.

OK, I'm a picture dude. I start mine with a weed burner. I light 5 or so coals, let spread for about 5 minutes. I close up and let temp climb to temp with one cap off (full open whole) and valve full open. When it hits temp I put cap on, open up add smoke wood grill, meat. I close up and let her ride. Some will put a coffee can with top and bottom cut out buried in center. Lite coals in chimney (only @1/2) and dump in can. Pull can and close up. In my opinion 20 coals in too hot to start. Will get pic....

What you say Brian, 20 too much?
I have used a weedburner after reaching down and pouring coals in a drum and losing a few eyebrows.

Fark dumping a flaming chimney down the drum!! The torch fires up the Eggs and the WSM's too! I'm even using it to flame the indirect baskets when I use the kettle and rotisserie.

Ok, so 20 too many. Good that's was I was thinking too. I thin I read 20 in anther thread somewhere.

I will actually be starting the coals with the basket out of the smoker and then I will lower it in via the handle.

I thought it would require more heat on top to get started.I guess not. I don't have a weed burner so thats not an option right now. I'll start some in a chimney and get into position with tongs.
