I'm a huge fan of brining turkeys - regardless of whether I'm going to smoke them, roast them or deep fry them. A buddy of mone has promised me a fresh wild turkey this year. I've never cooked one. Most of the stuff you get at the store is loaded with extra stuff that they inject into it.
Is a wild turkey more likely to dry out when smoked, even if it's brined? What about deep frying it?

I did one one Halloween. It seemed there was much more fat under the skin than a farm raised turkey. That being said, it seemed like there was an abundance of juices for the breast. The dark meat still a bit "gamey". But, all in all, great.

One of my wifes relatives in Oklahoma swears by soaking wild game in a vinegar brine and thorough rinse to get rid of gamey taste.

I cook the wild ones the same as store bought. The wild turkeys breast will be a dark meat like a wild duck though since they still use the muscles to fly. I love them.

We cook them in a brown paper bag. Never dryed one out.
