Why do you have a ball valve air control AND the Weber one touch air control? Which one do you use the most?

Figured the one touch might be too course so I put 1 one inch ball valve and figured I could use for Digi Q anyway.

Actually I bought a whole boneless turkey breast. This is only half of it. I cooked it on the Fast Eddie I have. I use stainless safety wire and tied it. I cooked both and it was a huge one. Lots of meals. Practice for the holidays.

Norco, that drum fabrication setup is too cool for words. Awsome, simply awsome!! You and thirdeye need to get together and start a bbq company. The bbq community would step up a few notches.

Ok, I gotta know how and where... How did you cook that beautiful turkey and where did you get such a thing as a boneless turkey? Just got told thanksgiving was at my place this year and umm yeah that looks like just the ticket.

I bought the boneless breast at Resturaunt Depot. Believe it or not that is half of it. I brined them and rinsed, tucked/rolled and tied with stainless wire. I cooked both on a pellet smoker seasoned with Plowboys. Tell you it was good. Been having turkey everything though. With no teenage boy in the house foog goes a long way around here. Good thing I got a hungry neighbor.

Plowboy posted a brine with salt, brown sugar, soy, worster. Can see if I can search it out. As far as tying I just tried to roll it so skin covered meat and was shaped descent to slice. Breast was already in 2 pieces and was netted and wrapped in foil. When i cut it out of net I wasn't happy with the way it was butchered.
