Well I made my first batch of Jerky this weekend, used Hi Mountain Hickory Jerky cure. It exceeded my expectations by 100%. You may have seen a prior post I made were I bragged about Jerky I get in Michigan. I consider it more smoked meat than jerky. Its still soft not hard and crunchy like alot of the stuff I get. I tried to make this like the Michigan jerky so I cut it into thicker pieces. Turned out great. Matter of fact I left the house after making and went to a local club I belong to so I could watch some football. The wife called me and I figured my kitchen pass had expired. To my surprise she just called to tell me how great the jerky was and that she couldn't stop eating it! I used a 5 pound eye of round. Anyhow heres some pics

Some nice looking smoked meat jerky.
Did you smoke it at a normal "smoking temp" or did you use a lower heat?

I smoked it for about 2 hours 15 minutes at 200 degrees.

So you obviously got the cure formulation worked out, did you add more meat to the mix?
Do you package it or how do you keep 5 lbs of Jerky? I know my last 5 lb batch got whittled down sampling for doneness! I like mine a little drier. I like the Hi-Mountain products, the instructions make it just too easy!

Yeah, Hi Mountain Jerky seasonings are the best. I esp love the cracked pepper n garlic. YUMMY!

Well after my slip up with the instructions "prior post while curing I used the wrong amount of spice got the cure and spice quanties reversed" I just let it go and it came out great. Only thing I was disappointed with was I tried three types I put Habenero flakes on some, garlic pepper on some and just plain pepper on some. I couldn't tell the difference so I mixed it all together at the end before vaccum sealing. Think I was a little scared of the habenero so I dusted a little to light.
