Safeway has ribeye roasts and steaks on sale for $5/lb!

That being said...I brought home a 6 lb roast and I thought I would vacuum seal this roast before freezing it for later, and thought maybe I should apply my EVOO and spice rub of pepper, rosemary and garlic before I seal and freeze it. Is this a good idea or should I wait until it's time to cook before rubbing it?

wait until its time to cook..fresh is best...esp w/ herbs

Just freeze the steaks. Season per meal.
