:icon_coolAfter two days of plowing through 6 racks of ribs my boys wanted something South of the Border! Well, I had trimmed the ribs and smoked those pieces along with the ribs for the first 3 of the 3-2-1, so into the crockpot those pieces went. A tsp. of rub, a tsp. of cayenne pepper, a couple of finey diced Japs and a 75-25 mix of water and apple juice made a decent broth. After cooking to the consistency of a BB and shredding, I added a Lg. jar of Herdez medium salsa. The results are as follows:

Great idea, shredded rib meat makes great sandwiches too.

I love bbq burrito's, that looks excellent.

btw, what kind of wrapper did you use? looks homemade, nice and thin

Never thought of that. It does look very good. And also HUGE. I woulda knocked down both of those with no problem.

It's just amazing what can be wrapped in a tortilla. I'll stick with the chili colorado or chili verde though.

Looks good DD. I'd bite into them burritos, but it looks like ya missed out on a major food group - the GREENS! :twisted:

Looks great!!!! But (no pun), wouldn't a butt do the same thing at a lesser cost? You are covering up the taste of rib meat. Again, Please dont take me wrong on this..... Just a wondering....
