So Saturday I was almost all by myself; the kids were with grandparents, and wife slept off a bit of a hangover most of day.
I found an actual Butcher shop. Not really any of those out here in Orange County. We mostly have "Carnicerias"; meat markets that sell mostly thin cuts of skirt steaks and chuck steaks for asada, chicken for asada, and mostly marinated. So I decided to go on a search for an actual butcher and found one, in Huntington Beach. Great place, good looking dry aged beef, pork.
I was set on making some beef ribs, so I bought a nice slab, about 4 lbs worth. These beef ribs are meatier than what I have found at the markets (Food 4 Less, Ralphs, Stater Bros). They actually looked pretty good. Then I saw the babybacks. These were bigger than what I buy at the previous listed supermarkets, or any Carniceria I have been to. They were real meaty, what a babyback SHOULD be!! I think they were even slightly larger and meatier than what I have found at Costco or Sams. Anyways, I was really impressed with what I saw. They also had the aged beef rib roast. Those looked great also, but I did not want to spend that much money. Maybe soon though..... They did not have pork tenderloin, though. So I went to Plowboys Market and bought a pork loin (not tenderloin) at their meat department. Plowboys has a pretty good meat department too (and they were nice enough to just give me a few yards of buthcer string), I was just blown away by the butcher shop.
I dry rubbed the baby backs and the beef ribs, set those on the smoker. Then I took the loin and stuffed it with red onions, sliced garlic, fresh rosemary and some provolone cheese, and wrapped in bacon. I also put on a couple of fatties, one of them wrapped in bacon, and a few sweet italian sausages I bought at the butcher shop. I used half of unwrapped sausage to make some baked beans, using most of Kerri's Hog Apple Beans recipe, but I did not have all the ingredients, so I made do with what I had. It all came out pretty good. The loin was real good. I also found some good sauce, called Best BBQ sauce. it was pretty good, real sweet. Here's some pron:
