Breakfast for Dinner

I had leftovers to use for dinner tonight and decided to do a breakfast dish instead. Some pan fried Goody Girl potatoes and a BBQ brisket, bacon, onion, garlic, and cheese omelet was what I ended up with.

Instead of a Cook's Choice, Wings, or Sausage, a contest should have a breakfast category. You could go a lot of different directions with that. Hot, cold, sweet, spicy,... it would be fun.

That's the base. I double the cheese, onions, cayenne and top with Dizzy Dust.

I liked the dinner omelet so much that I used the same ingredients for breakfast this time with a little chipotle tabasco sauce.
