I don't live too far from Foley myself, about 50 minutes. Nice looking sandwich. Is this place on the main strip going thru downtown Foley?

Yep its CO RD 10...and if you want the best food in town Head west to the Tin Top. No BBQ but the best seafood you will get. Make sure you get an large order of the sauted crab claws.

They are sauteed and put in a cream lobster sauce and then covered with parm cheese and broiled just for a bit. OMG they are to die for and the sauce is like a soup that you sop up with bread...ok my mouth is watering.

Sauteed? Interesting. I've only had them fried.

And yes, hoe cakes rock. :razz:

Sorry I missed the reply. It is my favorite! Talk about a "regional" dish, this one sure is regional.
I saw it a lot growing up in Middle Tennessee, but darn hard to come by in many other places. Proof, we have a guy from about 100 miles from Nashville asking what its like!
A must try. Serve it open face. One cornbread with the pork on top.

Another good recipe is (google it) for "hot water hoecakes". Also delicious.

2 c. cornmeal
1/2 tsp. salt (optional)
2 c. boiling water
1/2 c. cooking oil
Combine cornmeal and salt in medium bowl. Make sure water has boiled. Pour boiling water into cornmeal mixture. Stir until soft mixture forms. If too thick add more boiling water. Scoop out with a large mixing spoon.. Place in greased skillet. Form like a pancake. Cook both sides until golden brown.

Might I offer my take on PanFried CornBread?
2 cups yellow self rising corn meal
2 eggs
1 cup sweet milk
1 cup rough chopped sweet onion
12 dashes hot sauce, I use Garlic Texas Pete.
Mix together in large bowl, if dry add a little milk,
if too wet add a little corn meal, don't mix too much.
Heat 5 Tablespoons corn oil in frying pan, medium heat.
Test drop a small spoonful of mixture, If it sizzles right up
you're good to go.
I use a large stainless mixing spoon about 4 inches long
but you could use a 1/4 cup measuring cup to spoon the batter
into "dollops" roughly oval shaped into the frying pan.
Don't crowd the pan!!! If about a ten inch round pan do just
three "dollops of batter at a time leaving plenty of room
between batter drops.
When you notice browning around the bottom edges and
bubbles barely coming and breaking the surface,about 4 minutes
give or take, carefully lift and turn over, being careful
not to splash hot oil.
Again, when you notice browning around the edges
cornbread is done. As the batches progress it may be necessary to add
more corn oil to pan.
Butter 'em up and enjoy!!!

N8Man, nice job. I like to dice a jalapeno for my cornbread along with some frozen corn that I run through my spice grinder. One tablespoon of milk is substituted with Jack Daniels corn mash whiskey.

Sorry, around here, NC, we older Natives say "Sweet Milk", which is regular, full bodied, loaded with fat Whole Milk to distinguish it from ButterMilk.

Just gothome from Wally World. The wifey just shook her head and laughed when she looked in the bag and saw 2 boxes of Jiffy cornbread. :biggrin:
