Well here it is.
I have to say, that this was the BEST piece of meat I have ever had. I have done 4 other Waygu Briskets before, but none were the quality and grade as the brisket you get from Lobels of New York. Words can not describe how great it tasted. Easily a 100x better than the so called Waygu I got from another butcher.

The Kurobuta pork ribs were amazing. I had ordered St Louis Style, but they accidentally sent me baby backs. Oh well, I get free St Louis style sent to me as an, oops we bad, gesture. These bad boys were so meaty and juicy. Best ribs I ever tasted. I just ordered a pair of Kurobuta pork butts. I can not wait to taste those. If the ribs were any indication, the pork but will be incredible.

I cooked the brisket at 230 degrees and it was done strictly on temp, I think it took about 9 hours to cook, but I wasnt paying attention to the time. When it felt like being done, thats when it was done. . No foiling, no injection, and just a dusting of rub (you wanna taste the meat right). It was cooked over red oak charcoal, and apple wood.

WOW! How big was the brisket? It looks incredible! I did a Waygu flat last summer and it was the bees knees (IMHO)...yours looks even more awesome! Great job bro! :biggrin:

I used to cook waygu all the time for contests until I got 4 bad ones in a row.. meaning so/too heavily marbled that it was hard to get a slice that had enough meat in it. So I switched to CAB and Sterling.

i dint know I can get them locally at Lobels.... so since its been 2 seasons since i switched I figured I would drive in an see what they got...

then I saw this on their website.... HOLY CHIT!!!

I saw that too and had the exact same reaction and from what they said that is actually cheap for Wagyu. They said the expect to pay around $100 per pound!!

Those are some great looking pics. I have never seen a brisket that thick in my life. It looks like it was done to perfection.

People compete with brisket like that ?:shock:

This is because Waygu, like Kobe beef is very well taken care of while alive and mooing. They are massaged daily and Kobe (not sure about the American version) is fed beer and they have relaxing music playing for them. The beer, the music and the massages relax the cows. This reduces typical stress and helps to create better marbling.

You pay for the quality.
I have bought cheaper Kobe briskets before, and the flavor was mild compared to this.
I have never had a piece of meat so tasty, and I have had Kobe steak b4.

It was well worth the price (free with gift cards), and I will definietly get another.

You have to splurge on good food once in a while, and this is worth every penny.

If you are considering on, and the price makes your butt hole pucker, have your buddies chip in 10 each. It will make it easier on the pocketbook, and 10 of you can enjoy the highest quality beef you can legally get in this country.

Waygu beef is one of my newest dreams/goal. I WILL have Waygu beef one day. That is one AWESOME looking brisket. I can taste it from here. it is so good.

We've used Snake River for Wagyu - about half the price quoted above, but if your sample is representative of what Lobels is offering it may be worth it for competition.
