Had beautiful weather last weekend...I set up my old burner and cast iron pot under the shade tree for some finger food and cold beer.
The cooker is made from a piece of pipe, expanded metal, a burner out of an old hot water heater and rebar for the legs.

The catfish were from my last camp out and the calf fries (mountain oysters) were homegrown.

Seasoned and rolled the fries in cracker crumbs...

Sledneck it's a cornmeal batter similar to cornbread, I add peppers, onions and corn, then drop into the hot oil by spoon and fry til golden. I'd be glad to post the recipe if you are interested. :)

Now that's some fine eatin' :-D I could kick back under that tree and chow down on those treats.:cool: Some creamy horseradish dippin' sauce and some cold brews to go with those treats and a person would think they went to heaven.:wink:

Milehigh....we have what is supposed to be the World's largest calf fry festival and cook-off in Vinita, OK. It's held every September.

According to the website....over 2000lbs of calf fries are consumed at the festival every year. That's just nuts.

Here's the basic hushpuppy recipe....
1 cup of cornmeal
1/4 cup of flour
2 teaspoons of sugar
3/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of salt
1 egg...beaten
1/2 cup of milk...you can use buttermilk

I mix this together and add chopped green onions, minced jalapeno and corn. You can add anything you like.
Drop spoonfuls into hot oil and fry til golden.


You can even use prepackaged mixes and just add what ever you want to it.

Now that looks like some good eats. See now, here we go again, territories and all. Midwest there and south here, beef and pork. I have never done the calf fries, but I have done enough hog fries, if that is what we want to call em.

Patty, do you raise Angus for beef? I used to dabble with Limousin a few years back? We crossed an Angus and a Limousin a few times...great beef! :-P

Around here, Rocky mountain oysters, or sometimes called prairie oysters come from a pig. Calf fries are just that, calf nuggets. Good eats.

Really...I guess it's all in where you are raised. I grew up in Tennessee as a kid and we called ANY testicles "Mountain Oysters"...but you are right...mostly pigs. :-P Here's something interesting...while we're all on the subject...thanks to Patty! :biggrin: I had to google it...

Up here in Canada, we call them "prairie oysters." In fact, we even have a country music band with the same name. Not sure what you call the moose or deer equivalent, but my girlfriend's European dad and his buddies used to fry them up fresh when they went hunting.

Great looking eats Cowgirl. Wouldn't mind trying a few myself. You really have a great cooking repertoire. :razz:

Very few things scare me when it comes to food. We waste very little when we harvest any animal. I've had my share of Rocky Mountain Oysters and cold beer. Dang good combo in my mind along with bbq sauce and hot sauce for dipping.

I don't really mean to hijack here (actually, I'm not sure what the topic is with all the talk of coozies, steers, testes and lack thereof), anyway.....

Cowgirl, have you ever been to Pete's in McAlester and sampled the lamb fries? One of the few places that have them on the menu everyday, and do a pretty good job with'em. When I go there, I can't keep away from the ribeye and the choc, but get'em every once in a while.

Mountain oysters are one of my favorites, I go nuts over them. A lot of bars serve them and some resturants even have a dinner plate, with thicker slices.

Go to Foodnetwork.com and search for hushpuppies. Use Emerils recipe. It's a good one.

After watching a few episodes of that guy on the Travel Channel calf fries are tame, I'd give them a try.
