I put 8# of Royal Oak briquettes and a couple of chunks of cherry in one of my UDS's last night and added a chimny of lit charcoal at 9:00 pm. The fire was putting out the sweet blue by 10:00 and cruising at about 275*. I put on an 8# butt injected and rubbed with a modified Chris Lilly style injection and rub, backed the ball valve to about half closed with the other nipple wide open and went to bed. Got up this morning at 6:00AM, the UDS was holding steady at 225 and the butt was at 190*.:cool: Got it pulled off and wrapped up in a cooler for later today. Drum still cruising along at about 250*.:biggrin:
