After the calamities of Wednesday had quieted down, and I finished off the last of the Yellow Jackets Thursday Morning:twisted:, it was time to Smoke Something!!!!:-D I installed a third rack in my DrumPit and Fired that Bad Boy Up!!! Once it was close to Smoking Temp, 250*, I layed the Meat to it.
Stacked it up with BabyBacks and Chuck on the middle rack
and Kielbasas and Link Sausage on the top:

Smoked Cleared to get a good look and to add the glaze. I used some Cattlemens Honey BBQ sauce and thinned it down with Amarito...Fantastic taste to the ribs:

Once the Kielbasa was at 160* internal I sliced it on a bias and chunked it into a pan with Sauerkraut and sliced onions and put it in the Smoke for an Hour or so:

MMMMM Hickory Smoked Sauerkraut....It's Really Good!!!

Chuck is a Four Pounder and took about Seven and a Half hours to get to 205* internal. I foiled it @ 170* with Worcestershire, Beef Broth, and Kahlua.....Man it's Tasty!!!!:tongue:

As much as I love traditional BBQ stuff that Kielbasa and Sauerkraut is the bomb. I was going to grill some steaks tonight before I went to work but I'm thinking I am going to fire up the drum and do me some sausage and kraut too. Man that looks good.

Fellas, I tried but the darn things kept falling thru the spaces between the grates.:-P And I had whipped up a special Glaze for them, too.:twisted:

We are only limited by our imaginations, Sometimes I try stuff and it works well:-D, sometimes not:sad:, but try I must:wink:

I have to agree, looks great.:cool:
I think the trick here is be sure not to oversmoke the Kraut. I can see were it wouldn't be as tasty had I left it in the Smoke more than an Hour and a half.
As it is though, it turned out better than I could have asked. Smoking the Kielbasa first was defintely the key.:-D And I would recommend it to anyone that likes Kraut.:wink:

I would NEVER kill a Honey Bee...but Yellow Jackets are my sworn enemy of the insect world...along with Earwigs...DEATH TO THEM ALL!!! :twisted::twisted::twisted:
