Ok, here's what I'm thinking... I've wanted a cold smoker for a long time, and I am about to do a UDS... I could do 2 UDS smokers, and have an outlet to which I can attach aluminum tubing.

Does that sound like it would work? Put the fire in the charcoal basket of one UDS and have the food sitting in the other UDS, with enough tubing to let the smoke cool down.

it gives me reason to have not one but two UDS's!

I like it. I was thinking something along the same line but I'm not sure how to create enough draft for the "second" smoker.

A fan could be put into the 2nd smoker, sucking the air from the UDS with the fire going into the box with the food.

Here is a photo showing a smoke generator and cold smoking chamber. This is a knock-down one, fueled with propane. Maybe making a half drum for the generator and piping it to the full sized one would work.

I'm actually starting to think Alton Brown now... I'm still for the double UDS, as they can be used just to smoke stuff in general... but in one, put a plate below the grate where I can set an electric heating element (think hotplate). On that, put a pan of sawdust, and room for a fan at the outlet to the tube. Close off all the exhaust in that unit, tube it to the next UDS, and it may be good to go. Low temp heat with forced air circulation.

If you were going to have a forced draft fan, would it be better in the drum used for smoking? This way, it is pulling the smoke instead of pushing it.

I agree. Small computer fan in dryer exhaust tubing.

I was just thinking that it would be best to do it in the chamber with no food in it... Dripless mod.

Here's something I made coupling 2 computer fans for 2-inch pipe. Something to fit 3-inch aluminum dryer vent would just use the larger fan.

I would push the smoke rather than pull it. Easier on the fans.

I've used mine for cold smoking cheese. I run a piece of metal dryer hose from the 2" nipple on the top of one of my UDS into the door of my ECB that I sit on top of my 2nd UDS. That lets the smoke keep an updraft instead of dropping down and possibly allowing condensationg to form. Works great.

I'm pretty sure it was discussed in the uds thread, but yeah- you could also do it from your primary smoker down to uds, especially if you had a fan pulling the smoke.

you could run the duct from a buried smoke box to one of the intakes and have the fan on the exhaust.

You could get a smoke pistol and mount it on side of drum. I did my cheese with my homemade one this last Christmas. My drum is 85 gallons and it worked out great. Some guy is selling them on Ebay.

just put a 3lb coffeecan w/ holes & about 5 briquettes & a coupla chunks of wood(less during summer if yer brum is black & in the heat)

consider using a 1/3 closed drum ( cut down to 1/3 its normal hight) done the general UDS manor except 4 inch hole as the exhaust piped up to a 4 inch sheet metal collar ( not galvanized) you could use 4 in stove pipe from there to your smoke chamber , possibly another drum with a 4 in collar on the bottom and 4 in on the top with a raised stack for the exhaust might be the way to go

craigslist is a website - primarily used to locate more stuff to buy or sell
a favorite of the brethren to find more Q hardware or to unload it when the SAF (Spousal Acceptance Factor for the attached ) has reached it's limit.

it also has a large personals section that is riddled with auto bots (spam )

Probably both.....I have too many projects going on now, and I like doing them alone. lol :biggrin:
