Ok, so Jay build's them, we use them. What would like to add to your spicewine for convenience that isn't going to require sending it back to
MO?

Collapsible table for the modified larges on the trailer?

My Son Kyle has come up with a 1000 ideas
I have only let him do a few
My favorites the Charcoal Baskets
and the Klose Smoker Style shelves
(expanded metal shelves)

No handles on mine. It's mounted to the trailer.

Did he weld them or just create replacements sized slip in's for the donut racks? That's a good idea actually, considering I have the expanded metal.

We have done both replaced the stock rack inserts and built complete shelves

Note the reason we did this is we clean our shelves with a Weed Burner
It takes a expanded metal shelf to handle those temps

On the trailer units....I think we need a stripper pole.....generate a little extra income while competing......

I got to see pictures of that! A weed burner. Very good idea.

Maybe a closable opening in the bottom for cleaning out grease that got into the firebox.

I've been thinking about this - I picked up a 2" stainless steel marine waste water fitting and I've been considering how to flush mount it in the bottom of the cooker. When you want to drain/hose it out you just use the key and unscrew the center plug. I guess the question for Jay is is the bottom insulated?

I've been resting a hotel pan rest on the top of the firebox door while supporting it with my leg.

You could almost use a piece of flashing during the cooking and then take it out. Could use a set of magnets with a piece of flashing. At least then it would be removable.

On my first two Med.SW a full sheet pan would slide in where the lower shelf fits,on my new one i have to put it on top of the track and it's real tight. I think Thom said he uses a auto drip pan.
