I got the bug and made a UDS this last week and did my 1st cook yesterday.

I didn't realize I got them boneless until I opened them up:

Rick, looks great! That's a big chunk a meat for the first cook. I haven't used my offsets in over a year since building the drums. Getting ready for my third one for home use and have built two others for friends. The taste is second to none for me and it's soooo much fun. Hope you try a lot of different things and keep us posted!!!! How about a pic of your drum? Congrats brother.

in the third picture, what is that UFO in the bottom right on the cutting board, that piece would of be used as a quality control sample at the smoke site, nicely done

Thanks, I gave my offset to my son Saturday! He does a lot of hamburger cooking at his work and likes the large area of the offset. I could tell the drum was going to be my preferred method. Plus, the misses said if I was going to make a drum I needed to get rid of some of the others.
