Ok, my first try at smoking ever. I decided to go with something I know how to cook in the oven well, a chicken :-D

Free range chicken, trimmed and ready to start

Marinade for the chicken, juice and peel of 1 lemon, a handfull or rosemary (I have a huge rosemary bush in my garden so it goes in everything :D ), salt, pepper, 3 cloves garlic, a good few lugs of olive oil and mash it all up in my granit pestle and morter

Rub the marinade all over the chicken and leave it to sit for a while

The remains of the marinade ingrediets and the lemon get stuffed in the chicken

Been on for about an hour, there's also a bacon joint on the rack below and the white thing is a block of halloumi cheese I decided to try smoking. I guess it should work as it doesn't really melt.

Looks good gandalf. Smart to start with familar stuff so you will know what to expect.

Chicken looks good so far. Love that halloumi cheese.

I never heard of halloumi, so I Googled it. It looks very interesting. I'm gonna have to try it. That is if I can find it. It may be plentiful in Middle Earth, but I've never seen it in my part of the woods.
Is it a sharp, or mild cheese?
And congrats on your first smoke.

It's not really like any other cheese I've had, not really got a cheesey flavour. The texture is very strange too kind of rubbery when it's raw. If you fry or grill it the inside goes gooey and the outside browns and goes crisp.

Looks great. It's always a good idea to start with something that you are comfortable with. Before long, you'll be smoking like a pro!

Juiciest chicken I ever had, think I overdid the smoke tho, the skin is a bit over-smokey

Still was my first go, I'll just use less wood chips next time.

Had a little taster and it's very yummy

That's my lunch sandwiches sorted for next week :-D

Took the skin off and roasted it in the over for crackling... that won't last long :icon_blush:

Try Whole Foods, Trader Joes, Fresh Market, or what ever of that level stores you have in your hood. I get it at my local Whole Paycheck store.
