Filled the water tray with sand on the Tailgater and I doubt I’ll ever cook with water again as this little cooker seems to provide plenty of moisture to the meat without the water. I covered the sand with a layer of tin foil. The proof is in the meat, as you can see the brisket is awesome. Cruising the meat counter at a store that generally doesn’t offer beef that I will buy looking for pork chops the other day and run up on this 7lb Choice brisket flat for 2 bucks a lb. Couldn’t just cook brisket so a got some bresticles to go in there too. Brisket didn't get done Sunday night in time but I cut a thin strip off of one side of that flat so we could have some with our chicken and beans. I don’t know but I think I might just have me a sure fire winner on this brisket here and just hope I can duplicate it down the road – it’s like butter in the mouth and taste like heaven.
