View Full Version : Seeking a little expert advice...

I am new to the group and just wanted a little expert advice.
Presently, smoking 20 lbs of pork ribs and to accomodate them all
on the grill surface of my Brinkman Gourmet smoker, I am using rib racks.
Using this racks does it increase the cooking time, due to the close proximaty
or does it make a difference?

Usually additional volume will add to your cooking time, depending on certain factors. If you had the pit up to temp before adding the 20 lbs of ribs there shouldn't be much of a difference, I'd still bet on around 5-6 hours if we're around temps of 225-250. I would be more concerned with the exposed surface area of each slab. You don't want them touching.

Rotate the rib racks at least, and flip the ribs if you can. I think that helps with more even cooking, color, etc....
