They are trying to take out bacon away from us!!!
I was at the grocery store yesterday and saw this.

Can you even call it bacon if it isnt cured?....its just lightly smoked raw pork belly strips.
and its Certified Humane.....other than they kill it and slice it up and eat it...very humane.

sorry for the bad photos...I saw them when I got home and found that I had some gunk on the cellphones camera lens.

Certified humane? Certified tasteless don't they mean.

Just because you call it bacon, doesn't make it bacon.

I saw that the other day, I didn't pay much attention to it but the "Certified Humane" tag did stick out. So whats the deal with Uncured Bacon?

You can't call it bacon if it's not cured. Around here it's known as fresh side and not bacon and it needs to be used a fresh pork, either eaten or frozen right away. Uncured bacon sounds like it might still be sick.

I think that must mean the the meat was gently harvested only after the pig died of natural causes.

I assume it could still be sugar/salt cured without adding nitrites or nitrates, right? If I read correctly, that's what Benton's in TN does, and they're the "in" bacon these days.

Excerpts from a 6/14/07 article from the ATL paper:

"But [Allan Benton] remains a bit befuddled by all the attention. 'This isn't rocket science,' he says, his mouth turning up in a slight grin. 'There are no secrets in the meat business. All it takes to make good ham and bacon is salt, brown sugar, time and patience.'...

Making bacon started the way Allan Benton makes it, before big-farm industry and quick-curing processes that use nitrites and nitrates to speed and cheat the process took over. Now, chefs and consumers are demanding a product they feel has been made by hand, with minimal processing and lots of aged smoky flavor."

My wife has bought the "uncured" stuff and it's alright. I plan on making some bacon eventually, but I don't know that I want to take the chance of not using some cure if I end up cold smoking.

So....if its cured in salt and/or sugar...it still is cured.....just not using chemicals
