I refer to it as a Cheeto Fatty for lack of a better name.

I didn't use a recipe when making, just kind of scoped out the fridge and pantry to see what's available. However, here's an approximation:

Ingredients:

2 LB Jimmy Dean Regular Sausage
2 C diced Buckboard Bacon (smoked ham would work too)
1 Egg
1/2 C shredded Montery Jack cheese
2 Med Onions Diced
3 Jalapenos, remove seeds and pith then dice
2 TBSP diced garlic
2 TBSP favorite sausage rub
4 Cups crushed CheetosDirections:
Sautee the onion, garlic, and jalapenos in bacon grease.

Mix satueed vegetables, sausage, egg, buckboard bacon, cheese, rub, and 1 C crushed Cheetos. Mix thoroughly and shape into a roll.

Roll your uncooked fatty in the remaining crushed Cheetos for the crust.

Smoke at 225F until you reach an internal temperature of 170F.

Let the fatty rest for 15 minutes, slice and serve.

Yes. I always stuff too much chit in my fatties and I usually roll them up instead of mixing and shaping so I need a little glue to help keep things together. 1 egg per two pounds of sausage seems to be a good fix. Another good idea is to add some bread crumbs, crushed crackers, or in this case Cheetos to help retain moisture while stabilizing the meat.

This is the fourth time I've mixed diced BBB into the sausage and I'm sold on it. It adds a wonderful smoke flavor all the way to the fatty core without other effects.

I just did up some "Cracked Pepper Buck Board Bacon" that I think would go great in that mix...

Damn, I've got to find Big-Bubba soon, I've got way to much food to try out!!!!

That's an 18" cutting board so the Cheeto Fatty was around 15" in length.

The Flamin' Hot Cheetos might be worth a shot. All kinds of snack crumbs running through my melon at the moment. Way to go!
