About to bring her up to heat and throw on a flat, then a couple racks of St. Louis spares later.

The brisket is in -did not get pictures of it before I threw it in. Once I take the ribs out of saran wrap later I will take a couple of pics before I put them on.

We want to see smoke from the stacks. Sweet Blue!

The stacks are putting out a lot of white - I am guessing this is steam - it is in the high 30s here. When I have seen Jack's Old South cookers in action (another cooker that uses a water pan) I have seen the same white smoke. Myron said it was normal for his cookers.

I think there was a thread recently on this. I know last weekend I did not get this much white smoker, but it was a lot warmer. Using Original Charcoal and a couple of chunks of plum wood.

Other guys with SW, do you a ton of white smoke when cooking on cold weather?

Looking good Brian. Sorry I didn't get over yesterday. Had guests come in last night and my wife said they were not going to come to a dirty house....and the cleaning lady didn't make it Friday.

Large SW users - how often are you throwing on a chimney?

Had some chicken drumettes in the freezer that I thawed in the sink and marinated in some Stubb's chicken marinade. I just threw them on for lunch. Will finish them with some Frank's buffalo sauce.

Seems a lot of people don't use water. I do on mine and get white smoke. I will tell you that with water I had to use more flavor wood than I am used to. Thanks for the action photos.

Norco - that white smoke... is it steam or smoke from the wood/charcoal burning ? When I was using water, I noticed it produced a lot of steam out of the stacks.

It was very moist when I put my hand over the stacks - I am thinking it is steam. Plus, it had started before I added any chunks.

With the Humidity of the Spicewine or the Backwoods water smokers, I see more white smoke than blue. Even in the summer. With the offset. its always blue.

Definitely steam. I think it "washes" some of the smoke flavor, why I said I tend to use more wood chunks. All this compared to using drum. Not a bad thing in itself nice being able to use cooker to suit purpose.

I think I am going to like this Spicewine. Still have a ton of questions about it, but had it going from 6 to 4 today. Here are the brisket and rib pics - not too shabby for the first cook. The brisket was juicy and I was very happy with the texture. The ribs were a little overcooked, but that was my fault - watching football I kept adding time to my timer. No idea about the taste - getting over a cold/sinus infection and can't taste anything.

humidty and outside air temp.plus temp will make difference on smoke color.great looking food good luck in the year to come

Great looking food.

On my Backwoods I get a lot of steam comming out of the stack when it is cold out and when I open the door it fogs up my glasses. I think that is just normal for this type of insulated smoker but I haven't used it during the summer to compare it to how much is showing when it is hot out.

They were not installed when shipped. I put them on in that configuration.
