A really nice Mexican family has opened a restaurant in town and the wife always gets this dish ( I try something different each visit) It's called
El Senior Tequilla Quesadilla.
I had some chunked butt and thought 'd give it a try.
Made some Spanich rice and warmed up the refried beans and pulled pork.

Wife said it was every bit as good as theirs except I used spicy salsa (whimp) in the rice.
Now she thinks she's stayin home for it all the time. Not likely, if you want business to stay in town you need to patrinize them.

However we'd both be dead of botulism or salmonella shortly after.
I can't even figure out how to send ol Keale over in Hawaii some $.99 fatties.

We're just headin' out the door to run some errands...now I want Mexican! LOL! Good job bro! Hey...pack your .99 fatties in a heavy duty Styrofoam cooler with dry ice to ship to Keale. :-P

We went to a new mexican place here. Wife ordered something with chicken fajita. When it came out it was chicken ABTs, served on a bed of lettuce with some rice and beans. Not what we thought we ordered. The staff was wondering why we were laughing so hard. Frankly, mine are better (thanks to y'all)...
My dish was great, we'll go back but will read the menu better next time.
Looking good - now I want mexican... and I just got done eating dinner!

Home made Mexican w/leftover's kick arse!
Our local Mexican resturaunt serves a dish they call Enchiladas Rancheras, it's 2 cheese enchiladas topped with slow roasted pulled pork and covered with grilled peppers and onions, and they serve it with your choice of cheese or salsa on top, with rice and beans on the side. Imagine it would really taste good with some slow smoked BBQ.
