Just threw on a 6 lb. buckboard bacon butt. Tomorrow is poker, and Sunday is 8 chicken halves. Going to experiment with some of the hints offered by other brothers. Chicken skin slathered in mayo! Gotta work on that skin.......

A 12lb brisket from Walmart, and my first attempt at a fatty (hold the comments on that one) for the Packer's game, followed by Kansas - Nebraska basketball.

By the time that game starts I will have enjoyed enough beverages to not be bothered by it.

Sunday I will be cooking a wagyu packer and choice packer during the same cook. I'm planning on documenting the process to show the difference between the two briskets cooked in the same environment. I hope it turns out good.

Some good looking grub going on in this thread:cool:

I picked up a packer to break in the new UDS, also thawed out a rack of babybacks to put on at the beginning.

My main thing is to stuff and smoke about 5# of andouille sausage to put up for later use:icon_blush::cool:

Prices on pork are at an all time low so I picked up a few extra butts, brisket, and a strip loin. Smoking one of the butts, one of the briskets, and grilling 3 or 4 steaks from the strip. Anniversary is Sunday so have to do it up right.

Got some goods in the mail today so I'm going to be applying spice's heffer dust on the brisket and plowboy's yardbird rub on the butt.

2 Racks of St. Louis spares w/ my rub, 3-2-1 UDS-style in the WSM over lump and Cherry wood. Maybe a fattie. Thinking I'll do this for the Pats game, but I may do Chicken Wings instead and do the bones on Sunday. We'll see.

Gonna try some ABTs for the first time. I'm thinking some pulled pork mixed with cream cheese, and maybe for ****zengiggles gonna roll half of them in either D-Dogs maple rub or brown sugar.........or hell maybe both. Gotta couple of fatties and a yardbird to throw in the mix.

Here we go...New York Strips with Hawaiian Sea Salt and Tellicherry peppercorns grilled on the gasser with mesquite wood chips...:-P I've grilled a lot of steaks over the years...pretty much every Friday night for the last 10 years or so. I must say...these were some of the best I've tasted! :mrgreen: Must be the salt! :razz:

Slight change of my plans, Market had no Chucks so that was out. And I thought I had Fatties in the freezer, nope, not a one!!! But I had bought a 10lb Ham and a 10.5lb Picnic and all was not lost......

When I went to put the Ham on the cooking grate it was three inches too tall for my lid to fit so's I grabbed some small diameter cold rolled steel chain I had and improvised, formed some hooks on the ends and, attaching chain to grate support bolts and hooking onto cooking grate, lowered my cooking grate and I kept the fire lower and slower than usual.

I parboiled 150# of chicken yesterday. I baked 150# of chicken today for our Eagle Park Winter Chicken Dinners.
The parboiled chicken was coated and deep fried today.
The raw chicken was panned, coated w/melted butter. Then it was sprinkled w/Lawrys Seasoned salt. Then lemon pepper, then coated w/Drakes Mix. Then we lightly sprinkled w/ground Paprika.
Too darned busy for pics but folks ranted and raved over the baked chicken.
Im tired as hell, going to shower and bed.

Friday I roasted 3 lbs. of coffee beans. Saturday, Volleyball Tournament-long, long day into the night, made worse by the horrible showing of the Seahawks at the hands of the Awesome Brett Favre and the Packers! At least we got to watch it on a big screen in the Student lounge! Sunday a rack of Spares and a rack of BB's on the WSM and onto my second cook on the UDS Rotisserie!

If it weren't for the Foodsaver, there'd be no Q this weekend. We're having vacu-sealed pork tonight. Darn good but man, I haven't smoked anything in a couple of months now because of the move (and the holidays, the anniversary, the birthdays... sheesh). I'm starting to fear for my status as a Farker. Can it be revoked for being such a slacker?

Been doing quite a variety of things today. Two fatties are done, one is getting chopped up, sprinkled with more rub and going back in the smoke to see what happens when doing a burnt end method with them. Six kielbasa are done and 3 of them are already chopped, rubbed and back on for another burnt end test. Four chuckies and seven shoulder cut country style ribs are are almost done, and will make some burnt ends with half of them as well. Then I have 18 differently prepeared country style ribs for my ongoing experiments. I think that's about it. No, wait. I also have my Brinkmann offset running a cold smoke with some Tillamook cheddar, extra-sharp provolone, havarti and edam cheeses inside. That's it though.
