Pork Loin with Apple Stuffing
Of course, there are pork ribs, butts, chicken and all kinds of other stuff that gets cooked on a regular basis as well.

I do plenty of BBQ catering but I also enjoy doing stuff a little fancier too...

no problem... but an exact recipe it ain't... I just cook
butter in a skillet... saute some fine chopped onions (1 medium)
after sauted for a while add in chopped apples (2)
add a little dry sherry and apple cider or apple juice
let it reduce down a bit and then add boxed stuffing mix to get to right consistancy.
I may add some itialian seasoning and S&P to taste as well depending on the flavors of the stuffing mix.
I usually do the stuffing a day in advance and refrigerate, then stuff the loin right before grilling or roasting at about 325-350 on the smoker

Looks like you're only about 3 1/2 hours from where I am - save me some of that brisket - I'm jumping in the car now!
