View Full Version : Waygu (Kobe) Brisket Pron

Here is the Waygu Brisket I cooked for the Chargers/Titans game sunday. Man are Waygu Briskets finicky things to cook. No napping while this was on. But was it worth it.

I dont think I can go back to non Waygu brisket. This thing was so tender and juicy. I will definiety be doing another soon. It was the most amazing piece of BBQ I have ever tasted hands down.

Here is what I learned about cooking one of these. (A big thanks to all the Brethern that gave me tips, and to Mike Davis of Lotta Bull BBQ for the advice as well)

Multiple meat temp probes required. This one had 3 in it at all times.
There is pretty much no plateau that they (waygu briskets) will hold at. Temp rises consistantly.
They cook real fast. About 3/4 hour a pound. But thats not a given. You have to watch your temps.
Pull em at 185* and foil, then cooler.
Do not inject
Light rub.
Dont have many people over when you cook it, or cut it in half asap, and save some for yourself.

This thing was so juicy. WHen I sliced it open, it was like someone turned on a faucet, but instead of water, juice and fat ran out. Look at all the juice on the cutting board.

I suppose that was expensive meat vs run of the mill ol' brown cow brisket?

That meat looks awesome. Wish I could have had some. Maybe at Palm Desert?

Yep, looks like you nailed that one. I have heard of Kobe beef but have never had it. Being out here in the flatlands of Kansas that kind of stuff is not readily available. How large of brisket was it and how much per pound?

WOW that must have cost nearly $300.00, last I heard Kobe beef was not only rare,yummy but so much money most upscale resturants wont even touch the stuff. How much for you to ship me a slice of that wonderful stuff???????wow again!!!

American Kobe brisket - 9 lbs. - $109.99
Japanesse Kobe brisket - 32 oz. - $99.99

Gonna have to stick to american beef, myself!

you can get american waygo from 4-9 bucks a pound usually.

Do you normally slice your brisket before separating the deckle or was that for picture purposes?

Can't beat your Wagu but this is the closest I've come. Choice grade from my local guy.

In the Pacific Northwest we are picking up this brisket for $2.50 a pound on average, then we don't have to pay as much for shipping.

I got it once for $2.95/lb.

looks like we gotta move out to where Jim is - and yes that is a ridiculous price. I found one place that actually wants you to order one without telling you if your getting a packer or flat or how much it weighs - any takers on that little deal?

found on the net an 11-14lb kobe beef brisket for like $90.00, a 12oz steak $129. I may start using the kobe brisket for comps, little more money but worth it!!

If you live around the KC area, Ranchers sells Kobe brisket for less than $5/lb.
