It's 76* I got a pork tenderloin stuffed with Andouille sausage on the egg and enjoying a nice beer or 3. Food pics to come.

This one was stuffed by the butcher. If I do it, I freeze the sausage and then use a long slicing knife to cut an X and insert from the end.

Coals were still hot, so I ramped the temp up to 400* and threw on a couple of pork chops. Rubbed them with Klose Pork Rub and threw on another small cherry chunk. Smoked about 30 minutes and then pulled the plate setter out and finished them off direct.

It went about an hour and a half. I was running the egg close to 300*.
