Hi Folks...It's been a busy morning...I woke up in the mood to BBQ. :-D The first thing I did was to check the accuracy of all my thermometers and probes. I used a pot of boiling water and to make sure the boiling temp was accurate I checked it with my super fast, super accurate green thermapen. Yep...it read 212 degrees on the nose. :mrgreen: All my other Tel-Tru thermometers (probes too) were spot on as well.

Cool...thermometers checked...time to rub up the butt. I have an 8 lb boneless that Swamp wanted me to put rub in the cavity where the bone was...so I did. Brian, tell me again why I did this...:confused:

Then I wrapped it up and slathered it with "Wes B's" Star Market Special...this is seriously good stuff!:-D

Time to fire up the new WSM for it's maiden low-n-slow. Full load of Rancher...3 big chunks of apple wood...(Minion Method)...time to rock and roll. I love the smell of "Sweet Blue" on a Sunday morning.

I love the before and during, but my favorite is definately the after shots. I like to see the finished product.

Going on 7 hours at 235-250 average dome temps...internal temp is 163. Depending on how long the plateau is I could be having a midnight snack...or it'll be just in time for dinner. It'll be done when it's done. :-P There's always PB & J...:twisted:

What price does the Taylor usually run . I buy the cheaper ones from lowes and Wal Mart.

Not sure these days...I've had mine for a few years. It was under 20.00 though.

It hit the plateau at 165 and has been there for the last 30 minutes or so...I could be eating by 8 pm if I'm lucky.

The finished product..we were too tired and too hungry to take any plate pics...but it came out great. By far the best one I've done...very moist and tender. The rub from Wes B is awesome...gonna have to send him a bucket of money for some more. :-D

JD, that looks good! I always wondered, whats the diff. in pulled, chopped, or chunked? (is that a word?) Just personal choice?
You're getting good with that camera! I think I need to read my manual! LOL!

Easy peasy...fire it up and fuggitaboutit...:-P Yes...foil on the flower pot bottom and water pan...dry. :-P

LOL! They DO look pink...oh well. I think they compliment the color of the smoke ring very nicely.
