I did a "lite" meatloaf from a recipe in "Cuisine at Home". Equal parts ground beef, pork and ....yes..turkey. Came out surprisingly good. The topper though was the "Mushroom/sherry" sauce. Smashed redskins with buttermilk and bacon bits and green beans with some sliced sauteed portabella's.

Mushroom/Sherry Sauce
1 strip thick sliced bacon diced
3 cups mixed mushrooms, halved or quartered
1/4 cup shallots, minced
1 tablespoon all purpose flour
2 teaspoons tomatoe paste
1/4 cup dry sherry
1 cup chicken broth
1 tablespoon unsalted butter
1/2 teaspoon red wine vinegar
salt and pepper to taste
Fry bacon in skillet until crisp. Transfer bacon to a paper towel lined plate and return pan with drippings to burner. Add mushrooms and shallots and saute until mushrooms are browned, stirring occasionally. Stir in flour and tomato paste, cook 1 minute stirring constantly. Degalze pan with sherry and simer until evaporated. Gradually add broth, scraping up brown bits from bottom of pan. Bring to a Simmer and cook until slightly thickened, about 5 mins. Fisnish sauce by adding reserved bacon, butter , vinegar and salt and pepper to taste.

good looking herbs there, and you just can't get too much mushrooms as far as I'm concerned.

Good looking slice of meatloaf, that would make for a good sammy, especially with that sauce.

I saw this in the mag the other night, was thinking about giving it a try. Now I for sure am going to need to try it out, looks great.
