Good cookin from everyone. This is just what I thought it would be, I said it before and I’ll say it again the phatays with the hatches (hot) and dried apples (sweet) is perfect for breakfast anyway. I have always steered away from sweets – not that I don’t like sweets but more because I eat so dam much I don’t think I could handle the dessert on top of what I normally consume- so many time at breakfast I like to kinda save a bite or two of my meat and a bite or two of bread and take a little jelly / honey / or syrup and make that they end of the meal and that’s enough for me. This little trick does the same thing all through the meal - good is an understatement. The phatay has hatch peppers with dried apples on top of them and then cheese on top of that and rolled and rubbed with Head Country. Biscuits and gravy are always great as my better half has that down pat for sure. Next time I do this will be when maters are in season and will be the whole thing, i.e. biscuits, gravy, phaytay, bacon, eggs, cantaloupe, hash browns, etc, etc. Breakfast is the meal of Champions they say.
