Well, I got myself an egg last weekend, and so far I've made pizza and a pretty sizable rib roast. I didn't get pictures of those, but today I decided that to really break in the egg, I should try to make something tropical and delightful (Hi Rick).
Anyway, here it is. I made up a brine of kosher salt, sugar, black peppercorns, Old Bay and allspice berries and brined two fresh chickens for about 8 hours. Late this afternoon, I fired up the egg:

I quartered the chickens, and rubbed them down with a rub I made up as follows:
2 T Lemon Pepper
2 T Kosher Salt
2 T Garlic Powder
2 T Turbinado Sugar
2 T Paprika
I also quartered a fresh pineapple, which I dusted with cayenne pepper and some turbinado sugar. I also split a red and a yellow bell pepper and a large sweet onion.
All of the above went on the egg at 350F. I used the platesetter to get a nice indirect even heat. Also, I added some hickory chips to the lump. After a while, here's what it looked like:

After everything was good and done, I assembled the ingredients for a smoked pineapple salsa:
