View Full Version : Philly Cheesesteak Calzone

Came up with this idea when shopping today. I've never made a calzone before but it seemed simple enough. Pre-cooked some thinly sliced beef ribeye, charred red pepper slices, and onion.
I also bought one of those bags of fresh pizza dough at the store and rolled it out (started by dividing it in half but the first one ended up huge so the last two are a quarter smaller). Added meat, peppers, onions, and some provolone cheese on one half, put an egg wash around the edge and folded over.
I'm waiting for the wife to come home so I can put it on the grill but I've noticed one possible flaw. The cheese [probably should have been on the bottom since its now right under the vent holes and may leak out. We'll see....

Dang! I just ate and now I'm hungry again. I'm definitely looking forward to more pictures. Are you baking them on a pizza stone?

Cooking them on a stone cookie sheet. I need to get a pizza stone. Put them on the grill 5 minutes ago with some apricot wood. Had to (gasp) use the gasser due to time constraignts and the rain. Figure they'll be done in 15 minutes or so.

Here's one cut in half. This one was a little overcooked on the bottom but I like them that way so it worked to my favor! Tasted great, but I think mixing cubes of velveeta instead of the provolone could make it amazing.
