Hey guys -

I gotta say this is an awesome forum. I've been stumbling around for the last few weeks learning a LOT. I got hooked on Q doing a pulled pork over Turkey day and knew that I could do better even though it was excellent and barely lived to be a few tamales...

I just got laid off due to budget cuts so I figured time to hone my skills. Tonight was my first brisket ever and my second pork shoulder - I'm extremely happy with the results but realize I have a lot to learn yet. Most of all I'm looking to do a UDS... Minnesnowta temps suck for controlling temps on a kettle. Air temps were somewhat warm today - mid 20s but with wind blowing the temps varied a lot. BBQing in 1degree F not fun... Sucked it up at 170 and wrapped and moved to the oven :icon_blush: . Everything pulled and cut at 1am.

Got a potential offer in Atlanta though.... they got warmer temps to BBQ there right? :wink:

Welcome, check into Cattle Call, I dont go there, but alot of other people do. One word of advice, or maybe not one word but two. "FARKING RUN" if you found this forum, unless you want to learn alot, become obsessed, meet alot of great cooks, buy alot of rubs and sauces you never knew about, or end up spending alot of money on ANOTHER SMOKER and getting yelled at by the wife......... Love this place though and it's great because it seems to be a really active forum. There's really a ton of information and ideas on here. Spent a lot of time reading through the Roadmap - think thats why the brisket did ok. Did some ABT's over XMAS after seeing them on here and blew some friends away... they were gone so fast I don't think I even got pics! Just gotta fine me a drum.

KickAssBBQ if it wasn't for a buddy moving today I'd be there, I'm only an hour or so away from White Bear Lake.

BTW - Rachael Ray isn't that bad if I keep the volume off... :cool:

Welcome Brother Smoker...glad to have you aboard. If you produce that good lookin' Q on a kettle...then you will do very well on your up coming UDS. There are a lot of folks on this site who use them...and use them well.
