View Full Version : My New Year's Day meal (Lots of Photos)

We do the pork/sauerkraut thing, with mashed potatoes.. so here goes:

I added a brick of cream cheese, a stick of butter, and half a cup or so of half and half.

Then I put them in a ziplock, cut the corner, and squeezed them into a baking dish.

Then they went under the broiler.

Sauerkraut was simple... basic sauerkraut, then I rinsed and drained, and heated it up with champagne vinegar.

For the pork, I put thyme, basil, salt, pepper and garlic powder on pork tenderloin, then smoked them with cherry wood.

Curt, great looking eats there. About what internal temp do you go with the tenderloin cooked that way?

I like to use cream cheese in mashed potatoes, too.

I cook pork tenderloin to 145 F internal... I don't like it overcooked.

And I didn't make the sauerkraut.

I always say why ruin a good cut of meat by cooking it. Great looking pics. You're giving my wife ideas with the mashed potatoes.

great idea with the piped potato. did you bake that a little after making the mountains or is that seasoning?

Had I not been having the potatoes with the other stuff, I would have sprinkled some good grated Parmesan cheese on top, which does some really great stuff under the broiler.

Not only do I love the food, the pictures are fantastic. The lighting on the pototo pictures is really great.

Very nice meal Curt, love the potatoe's, glad to see other people taking pork to medium/well.....everybody still think's ya gotta kill pork and that just ruin's it...:biggrin:

I didn't know Rick and I were competing. :) He's too nice a guy for me to worry about anything like that... And there's plenty of room for good photos for everyone to bring their game up a bit. :)

Really like the piped potatoes, as well as what you put into them.

Does anyone besides me bake potatoes to make mashed potatoes? I find it takes some of the moisture out and then I add it back in with butter, heavy cream and cream cheese. I seem to be able to get more richness in then if I had boiled them, without them becoming watery. Plus I then have a supply of skins for making potatoes skins with.

Tim, I've done them with smoked potatoes... good flavor that way, too. I know that Indian cooking, for aloo parantha, baked potatoes are mashed for filling (at least some versions).

Curt, I only now saw this...awesome again! But that pork is a little too small a serving for me! I bet those oatmeal cookies went well with that meal!

Tim--always. I never make mashed potatoes any other way. I also always use cream cheese, heavy cream and butter too.

I actually do a mix of russet and red potatoes. I like the texture of the combination, otherwise the reds can be too waxy.
