Just put some oxtails in the smoker. Plan to braise them later. I'll keep you posted...

Do you eat them as is after braising? I know people eat them, but I'm not familiar with the options for them. Looks tasty.

Yup. Use the braising liquid for rice and gravy.

Yesterday I looked up a recipe for oxtail and lima beans. It is a classic Jamaican dish. I am planning on cooking it this week. MMMMMmmmm!!!

Hey Big P...:cool: Mama saw this post and almost died, she love's Ox tail soup which i will be doing now in the smoker, but wondered if you could give the recipe for braising them??

Braising is easy. Season your meat. Brown it (or smoke it for a while). Put it in a covered dish with a flavorful liquid ( I used water and worchestershire sauce). Put in an oven until tender.

Good looking for sure. I imagining that gravy over the top of the tails and rice. Creamey, thick, rich.....Home cooking for sure.

Also looks like Santa got you a good camera.

And I'm serious here cuz these "ox tails" of which you speak are new to me, but what do you do with them from here? Is there bone to deal with? Do you pull the meat off and add to a recipe?

Mista, make Oxtail soup...good eating, a good hangover cure also! Hiloboy and I posted a recipe somewhere...

HM,

Pick it up with your fingers and pull the meat off with your teeth. Shouldn't be hard cause the meat is tender. Suck on the bone like it was a rib or a neck bone. Lots of sticky, delicious collagen.

Wow, these brought back some memories. When I was a kid, we would have these regularly because you could buy a bunch for just pennies. They are now becoming quite popular and are not as cheap as they once were.
I have never smoked 'em, but my mom would toss them into a beef soup or simmer them till tender in some red chile then they were served over a bed of spaghetti.
You have inspired me to try them this way and then toss into some red chile and serve with noodles.
These are some dang good eats.
Along these lines, have any of you ever had pork neck bones stew?

Great looking tails there BM, I did some Ox Tail last night, but never thought of smoking them 1st, something I'll defo be doing next time round.

Oxtails are really good eats! Our meat guy here must think it is connected closley to the primal ribeye or something. Not cheap here. Last I paid was $3.29 lb for them.

Big Mista, Those look great. My wife also loves Ox tail soup. will trythe braising. I made Ox tail soup for her one time from scratch. It came out pretty good. It took forever though.

Shes worth it though:rolleyes:

They are pretty expensive here too. My MIL just happened to get some on sale.

My wife's family makes ox-tail soup, which I find bland and boring (just like my in-laws). I'm going to try smoking them for sure.

Talk about bringing back memories. Granny used to make ox tail ribble soup. I haven't made that in over 20 years. Plain and simple. Boil the ox tail and take them out to get the meat off and add back in. Mix a cup of flour with an egg with your fingers and then crumble tiny dumplings into the boiling broth. Then as granny would say, "Sit down und enjoy some off der ripple soup, ja?"

Oxtail soup is really good.

Never thought of smoking oxtails, I have done nect bones in the past. How long did you smoke these tails Mista?

I smoked them for 2 hours. Put them in a pan with some water and worchestershire, covered with foil and cooked another couple of hours.

I love the idea of smoking the oxtails first then braising. I'm thinking that adding some cornstarch to the braising liquid to make a gravy might be nice. Luv the picture of Morgan.
