The Drum is finally done...

I'm really having trouble controlling the temp. The temps are to high. A little practice is needed...

The drum and food look really good. There are only a couple reasons for the high temp.

One its air leaks especially around the lid and or to much fuel and I am guessing that is the problem here. it wont take very much as you may be used to in what ever other cooker you have been using. How much did you put in it?

Great looking drum, love the stacks!! Do they draw well enough to kep a steady temp?

For just a normal cook I usally use around 8lbs of Royal Oak and only start about 30 pcs and fill in hole in middle of fire basket. Runs 230* for 6-8hrs.

Good looking DrumPit you got there!!!!! Give it a little time to get used to
how it runs, you'll be in the groove in no time. When I start mine, I only light up about half a Charcoal Chimney of Kingsford and add those to the charcoal basket dead center to which I have already placed about 10# of unlit and 3 or 4 chunks of wood. I rarely run my 1 intake more than half open and it cruises at 225-250* for hours. Every now and again, maybe after 5 hours, I shake the DrumPit to cause ash buildup to drop out of the Charcoal Basket. Good Luck.

Larry congrat on your drum, the first thing I would check is your exhaust...if too much, fire tends to be high, even though intake is minimum...

310 degrees with all intakes CLOSED. Lid is tight. I'm thinking less air should give me a lower temp, but I can't figure this one out. I even stuck a rag in one of the stacks. Is it possible to have to much charcoal?

My basket is 12X12X11 but it's only about 30 percent full of Royal.

I'm so confused...

If not too late, try plugging one exhaust with wad of foil.

What's really strange is my first try had two 3/4 inch 90's as exhaust. I couldn't get the temperature up high enough. I replaced them with the stacks and now I can't get the temp low.

What are you running on intake? Are you lifting the lid? If you are ot keeping lid sealed it will draw air and climb fast. I did a trash man slam when I dumped mine and it made it out of round. I have to pay attention to lid seal.

I have four 1/2 inch intakes. Not lifting the lid.

I just went out and put the clamp on the lid to make sure it's sealed tight.

Keep us updated. How is your temp now? Remember gauge will be typically 35-50 degrees less than center grill.

315 degrees on center grate.
1/2 inch intake open, all other intakes closed

Here's another weird thing. I have two 2 inch stacks on the lid. Even though both stacks are wide open only one of them is hot. One stack is hot, so air is flowing through it the other one is cold to the touch.

I'm getting more and more baffled...

Bet it is drawing on cold stack. Plug it. Might try a stick match lit and see if flame or smoke is drawn in .

Gonna take time to drop temp. My advice would be plug cold and let coast down.

Plugged the "cold" stack and nothing happened.

Plugged the "hot" stock and temp is now at 250.

I don't understand any of this, but it's down.

I have no idea why this worked the way it did but after plugging one stack and not getting any results I plugged the other stack. Temperature dropped and with a little adjustment with the intakes I've got it steady at 230.

Going to give it a try next weekend...
