This one is for the grand Poobah, or anyone else who has a fairly fool proof recipe... For years I have been hearing about his prime rib, and now I would like to give it a try. My wife picked up a really nice prime rib, and i would really like not to screw it up. I have the choice of using the gas grill, the Weber kettle or the smoker. Please help me before monday!!!

Welcome Noah

Go to Cattle Call.

There is a search function on the top of this forum :-P

I don't think Prime Rib thread is in the Roadmap, but if you looked in PHIL'S SPECIAL PLACE (http://www.bbq-brethren.com/cookbook/viewrecipe.php?id=103&category=*BBQ%20BRETHREN%20BEEF*) you might get a few tips

noah.. ithe lang is a reverse flow, so you have no hot spot..

I would defiantley use the kettle.... go offset with coals on 2 sides and a pan in the middle between them, Start hot 375, coast to 275-300 for the cook, then spread the coals out and use it for a grill at the end.

I don't want to butt in, but can you do this on a UDS? I'm not sure of myself on the webber yet...

i havent tried on a UDS, but it works great on a WSM and a kettle. Based on the concepts, I am sure a UDS will turn it out great.

Dammit Phil! You were dead on. The only thing I changed was the Tariaki as my wife objected, but what an easy and wonderful hunk of meat this turned out to be. Actually, rolling the meat over the coals really did wonders for a nice crisp bark. That recipe is perfect.

Thanks again,

Phil's recipe doesn't say how long to marinade the roast. Anyone?

I PM'd Phil and he told me NO MORE than an hour as it is a strong marinade
