Great idea :rolleyes: It's the switch for the convection fan. Yeap, one big light switch.

Nice Cooker. Is the exhaust cover standard? Or did you add it. I'm looking for one for my Stumps.
That's the cover over the convection fan motor so it doesn't over heat. The exhaust is actually behind it. Rain can go down that, the other end is right above the water pan.

Breaking news - it take a lot longer to get 5 gallons of water hot then 5 quarts.

Note to self - next time start with hot water to get pit temp up quicker.

fatties - just cut up and rubbed - good but very spicey
asparagus - in butter
chicken halves and baby's are my neighbor's
wrapped item - warming up some baby's that were already smoked
chicken - beer can and plowboy
in tin - chicken livers for dog treats

VERY NICE

Ok more than two-
I just started with the sand in mine, It gets to temp alot quicker and it has less of a fluctuation from top to bottum. Its a great cooker, your gonna love it!

You'll definitely use less fuel to keep at temp with sand. With two chimneys like I used to use with water in the Spicewine, I'd burn my stuff up using sand! Hold heat forever. I've literally had no coals left below but holding at 200 to 225 above.

I will be testing the sand in the pan mod this winter in my party. I have done sand in my pan on my WSM and night and day difference, got to temp alot quicker, held alot longer and just overall a better cook. Foil the pan and to prevent grease from dripping in your sand.

I think I will use foil pans instead of placing sand directly into the water pan, that should prevent problems with your drain.

I tried sand in the party and found it hard to keep the temps down.

I lined the water pan with foil, then filled it with sand about an inch below the lip so the fat could drip on top of the foil I covered the sand with.

I tried 2-3 cooks with the sand, some problem with temps each time. Although the temp problem didn't become an issue until later in the cook.

The competitor water pan doesn't come out, so I could put some sheet metal over the drain hole to keep sand out and try that. But then what happens when I decide I like it and have to start transporting the unit for competitions? Take the sand out and put it back in?

how are you going to transport it? Do you transport it upright or laying down? If upright I would just cover it with foild and tire her down. If you have to lay it on it's side I think you have to shovel it out and put back in each time. Do you think the foil pan full of sand wouldn't work? Would make it a lot easier if you have to remove each time.
Also thanks for the heads up with the possible sand problems in the party. Something to keep an eye on.

Unfortunately, I sometimes have to transport laying down in my pick up.

Regarding the sand, I think a smaller fire would also help. but I'm acustom to the minion method. A small chimney at a time might work - I've just never tried that way.
