Cooking for a church camp board meeting tonight, and no time to cook all week.

Hauled the ECB to work, and I'm smokin in the parking lot! 2 beef chuck roasts and a shoulder roast.....and a 3-lb fatty of Jimmy Dean and a 1-lb log of Italian sausage that we had from our hog last year. Smoked on cherry from the back yard. Yum!!

Sausage is for the co-workers who will have to smell the food all afternoon!! :icon_devil

we smoked all summer long on a UDS right out the back door of a body shop I was working at. Amazing how many friends you make that way.

So we had a big windstorm all day on Friday, and it kept blowing through the ECB and kept the smoker really cool. :mad: Two of the roasts were still at 140º after 5 hours, and didn't go up any more after foil.

The fatty and Italian sausage turned out really, really, really good, though!

I scored a 22.5" Weber kettle on Thursday off Craigslist in Clarkston, WA for $10, and another 22.5" Weber lid at the local trash collection site today. Burned out my 55gal barrel. No more of this drafty ECB crap. Time for UDS!!!

Oh, and also scored a 10' long x 8" dia. cherry log yesterday...fo free!! :D

We have a no fire rule at work. So I made a electric UDS.
We put wood chips in pan setting on rod heaters. The aluminum dish with hole is a upside down flame proof lid from lab trash can. We put a stainless dog food bowl in hole and fill with apple juice. Cooks great but no smoke ring. These pics are before we mounted grates.

I learned a lot from the old timers. I have worked at the same since I got out of high school. I watched how people did things, how things worked and tried, and still do to replicate stuff. I am not great at anything but able to do a lot. I had a talented dad that brow beat you to do things his way (that always worked). God forbid if you misused or abused a tool while he was watching. Funny thing is I have a stepson who is light in the loafers and a daughter. I make my daughter get involved and am trying to teach her to be self sufficient. I will tell you brothers this, my grandson will have some cool $hit :twisted:.
